How to Make Your Own Sofrito

Ingredients:

- 2 ripe tomatoes, diced (or one can of crushed tomatoes)

- Olive oil

  2. Add the Rice: Stir in the rice and cook for 2-3 minutes, allowing the rice to toast slightly and absorb the flavors of the sofrito.
  3. Add Broth and Saffron: Pour in the chicken or vegetable broth and add the saffron threads, if using. Stir well and bring to a boil.
  4. Simmer: Reduce the heat to low and let the paella simmer uncovered for about 15-20 minutes, or until the rice is almost tender. Do not stir the rice once it starts to simmer, as this can affect the texture.
  5. Add Protein and Vegetables: Gently fold in the cooked chicken or seafood and mixed vegetables. Continue to cook for another 5-10 minutes, until the rice is fully cooked and the protein is heated through.
