Jiaozi: A Tale of Tasty Tradition and Symbolism

Here's a delicious recipe for making classic Chinese Jiaozi filled with a savory pork and cabbage filling:  

 

Ingredients:  

 

For the Dough:  

- 2 cups all-purpose flour  

- 3/4 cup warm water  

 

For the Filling:  

- 1/2 pound ground pork  

- 1 cup finely chopped Napa cabbage  

- 2 green onions, finely chopped  

- 2 cloves garlic, minced  

- 1 tablespoon soy sauce  

- 1 tablespoon oyster sauce  

- 1 teaspoon sesame oil  

- 1/2 teaspoon ground white pepper  

- 1/2 teaspoon grated ginger  

- Salt to taste  

 

Instructions:  

 

For the Dough:  

  1. In a large mixing bowl, combine the flour and warm water. 
  2. Mix until a rough dough forms, then knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic. 
  3. Cover the dough with a damp cloth and let it rest for 30 minutes. 

 

For the Filling:  

  1. In a separate bowl, mix together the ground pork, chopped Napa cabbage, green onions, minced garlic, soy sauce, oyster sauce, sesame oil, ground white pepper, grated ginger, and a pinch of salt. 
  2. Use your hands to mix the filling thoroughly until well combined. Adjust seasoning to taste. 

 

To Assemble the Jiaozi:  

  1. Roll out the rested dough on a floured surface into a long log and cut it into small pieces, about 1 inch in diameter. 
  2. Take one piece of dough and roll it out into a thin circle with a rolling pin, making the edges slightly thinner than the center to create a round wrapper. 
  3. Place a spoonful of the pork and cabbage filling in the center of the wrapper. 
  4. Moisten the edges of the wrapper with water using your finger. 
  5. Fold the wrapper in half and press the edges together to seal the dumpling. You can pleat the edges for a decorative look if desired. 

 

To Cook the Jiaozi:  

  1. Bring a large pot of water to a boil. 
  2. Carefully drop the jiaozi into the boiling water and stir gently to prevent sticking. 
  3. Cook the jiaozi for about 4-5 minutes or until they float to the surface and the filling is cooked through. 
  4. Using a slotted spoon, remove the cooked jiaozi from the water and serve hot.

  1. Serve the jiaozi with a dipping sauce made from soy sauce, vinegar, and a dash of sesame oil. You can also add minced garlic and chili oil to the dipping sauce for added flavor.
